Lemony Slice

Ingredients


125g butter, softened
1/4 cup icing sugar
1 1/4 cups plain flour
3 eggs
1 cup caster sugar
2 tsp finely grated lemon rind
1/2 cup lemon juice
2 tsp icing sugar, extra


Method


Preheat oven to 180 degrees C. Grease shallow 22cm square cake pan, line base with baking paper.
Beat the butter & sifted icing sugar in a bowl with an electric mixer until smooth. Stir in 1 cup of the flour.
Press mixture evenly over base of pan and bake for about 15 mins or until browned lightly.

Place the eggs, caster sugar, remaining flour (1/4 cup), rind and juice in a bowl; whisk until combined.
Pour mixture over hot base.
Bake for about 20 mins or until firm. Cool the slice in the pan on a wire rack before cutting. 
Serve dusted with the sifted extra icing sugar.

Notes:
Make sure the base is well mixed together and all flour is incorporated.
Check slice after 15 mins to see if cooked.
