Chocolate LOVE cake

chocolate love cake
[adapted from jamie oliver recipe]

serves 2

cake
Preheat oven to 180° and grease a shallow 22cm (1 litre) baking dish.
Mix 2 tbs cocoa powder with a few tbs boiling water and stir until smooth.
In another bowl, beat 100gm butter and 100gm caster sugar until fluffy, then add cocoa mixture, 1 egg, 100gm SR flour and ½ tsp baking powder. Mix together, pour into baking dish and sprinkle with 2 tbs slivered almonds (or hazelnuts). Bake for 20-25 mins.

Chocolate Sauce
Place 25gm butter with 150ml thickened cream in a pan and bring to just below the boil. Turn off the heat and add 75gm dark chocolate, give it a stir and leave for 5 mins so the hot cream melts the chocolate [add a splash of your favourite liqueur if you like].
Once the cake is cooked, remove from the oven and pour the chocolate sauce over the cake.
Serve with cream and/or ice cream and share with the
love(s) in your life!
