Caramelised Chicken
Mix together 1 tsp thyme; 2 tblsp each of balsamic vinegar, soy sauce, tomato sauce, Worcestershire sauce, dark brown sugar; 1/2 tsp chilli flakes and 1/4 cup olive oil. Pour over the chicken and marinate for as long as desired. Cook in the oven until tender. Remove chicken and heat sauce on stove top with verjuice or wine. Serve with roast vegetables.
