Cinnamon Tea Cake

A winter-warming cake full of buttery goodness...

60g butter
1 tsp vanilla essence
2/3 cup caster sugar
1 egg
1 cup S.R Flour
1/3 cup milk
10g butter, melted, extra
1 tsp ground cinnamon
1 tblsp caster sugar, extra




Grease deep 20cm cake tin.
Beat butter, essence, sugar & egg until light and fluffy.
Stir in sifted flour and milk, stir gently until smooth.
Spread mixture into prepared tin and bake in moderate (180C) oven for 30 minutes.
Turn onto wire rack, brush with extra melted butter, sprinkle with combined cinnamon & extra sugar while hot.

Serve warm with thick cream or yoghurt and a freshly brewed pot of tea! Enjoy!
